I learned to appreciate collard greens at the Ethiopian restaurants in DC. Onions, garlic, berbere spice mix (cumin, cardamom, allspice, fenugreek, coriander, cloves, peppercorns, red pepper flakes, turmeric, gingerroot, paprika, cinnamon).
